Captain’s Jumbo Double Dozen!

In the later summer months, blue crabs weigh heavier in the crab pots, especially the large, 6”-6.5” and x-large, 6.5”-7”. Molting only once a year, normally in the spring, gives them a new shell to completely fill with salty-sweet crab meat. With the infrequency of molting compared to the younger crabs’ 8-20 times, the meat becomes compact or dense.

Crab fans notice the textual difference. Salt water doesn’t seep into the crab’s density as much, so jumbo crabs boast a more robust, buttery meat rather than sweetness of a younger crab. They bear the name JUMBO for their measurements from point-to-point and the size of the backfin or jumbo meat. Also, a bonus picks from the claws (claw meat) and crab halves (lump meat).
