Female “Sook” Blue Crabs,
the Sweeter Choice!
Depending on your dish or preferred palate, female blue crabs naturally boast a sweeter taste. Swimming side-ways with their ten legs, they prefer the mouth of the Chesapeake Bay, leading to the Atlantic Ocean. The higher salt concentration “seasons” their meat just like when you shake some sea salt on your favorite protein. The perfect combination creates an ironic sweetness, same true for female blue crabs. Crab fans love the salty sweetness.
Most crab attendees at Crab Depot’s Catering Events also comment, “steamed crabs always taste the best during Fat Crab Season with all the mustard in the meat!” Both male and female blue crabs contain this mustard or sometimes called “fat.” To sound serious, we can use the technical name, the hepatopancreas. It actually stores nutrients and filters impurities from the water. To see it, just crack open the shell and the yellow, liquidity substance is indeed this “fat.” The female sook steals the show for this benefit too with larger stores of fat since they need these extra nutrients to maintain their reproductive features. Many crab fans notice this difference and choose the female crab, especially for delicious recipes.
Some chefs whip up a creamy blue crab dip with Old Bay Seasoning. The rich and savory cream cheese complements the robust crab meat majestically.
