Caught in frigid waters, ranging from 66 to 1,312 feet in depth, snow crabs flourish in northern waters from the Bering Sea along Alaska and Russia, the Sea of Okhotsk, directly off the coast of Russia, and Canada’s Gulf of St. Lawrence, and Newfoundland. Talk about cold conditions! They prefer temperatures from 29.3°F to 35.6°F, which causes them to grow sweet, delicately flavored meat, perfect for recipe creations. Differing from the blue crabs that grow during hotter summer months, ideally in the 70°F to 75°F range, snow crabs thrive and grow in the winter weather.
Nature seasons both crabs with water conditions, but the blue crab responds with a robust, buttery flavor, while the snow has a subtle taste, best accompanied by hot garlicky butter. The differences continue with a textural flaky, plump blue crab lump and jumbo meat, and the snow crabs’ fibrous strands that pull from the long slender legs. Similarly, blue crabs do have “stringy” meat in the claws, but this meat boasts a slight tanginess. As far as extracting the meat in snow, simply snap the legs and the crab lover can easily pull the pristine, white snow crab portions. Blue crabs, on the other hand, necessitate mallets, picking tools and patience!
