Local fresh seafood all along the eastern seaboard includes wild-caught blue crabs. Especially found in coastal marshlands, the “Beautiful Swimmers that are savory” pack claw, lump and jumbo crab meat built from a diet of clams, oysters, mussels, shrimp, and other detritus or food matter. To extract the meat from the crab, follow these time-honored steps:
1) Turn the crab upside down and locate the tail flap or tab. On the male it looks like the Washington Monument and the female, the Capitol Dome. Pull it up and snap it off. With the created hole, carefully pry off the top shell or carapace.
2) Scrape away the gills or “dead man’s fingers,” along with any squishy parts like the intestines, etc.
3) Crack the crab in half by pressing both sides of the crab cavities inwards.
4) Break off all legs and claws and grab your mallet and picking tools.
Even though you naturally come prepared with the best tool, your hand, the mallet will help crack the claws to pick the claw meat, while a picking tool will savor each morsel from the shells. As you explore the shells for meat, you’ll find jumbo lump or backfin in the rear of the crab. Each crab boasts two large jumbo pieces that are built from the back paddle legs. Within the crab cavity, loads of delicious lump meat will easily flake away for a hot butter dipping!
